WIAW

Its October! WHAT?! September went by so darn fast, I don’t even know what to do with myself. Halloween…then Thanksgiving…then Christmas are all right around the corner. EEK!

Anyways, moving on, this week was sugar heavy. It is no secret that I always want all the sugar in the world. But sometimes, I am better about keeping myself on track than others. This week wasn’t one of them…Oops

On to the eats:

Breakfast:

Pumpkin protein pancakes. I am still experimenting with different recipe variations to try and yield the fluffiest pancake possible without overloading on calories and sugar. This try was pretty good. I will still keep trying new variations though.

Lunch:

Salad-Romaine lettuce, tomatoes, roasted artichoke hearts, brussel sprouts, and peppers topped with a sesame soy dressing. Best.Dressing.Ever. A bagel was eaten on the side for good measure. Because carbs are always necessary….

Dinner:

Enchilada casserole-corn tortillas layered with refried beans, onions, cheese, and topped with black olives.

Snacks:

And a dessert bar. My friend had a going away party before she left for college and her Italian grandmother went overboard on the desserts. So.Much.Goodness. This was all for 10 people…I was overwhelmed.
